Oh dear, Sunday night again . . . I don’t know about you, but Sunday night seriously bums me out. I always feel like I need just one more weekend day.
So how do you get rid of the Sunday night blues? Make a fresh and delicious summer-inspired dinner, that’s how!
Hello, veggies!
I went a little nuts in the produce department this afternoon, snagging some eggplant, zucchini, squash, tomato, and a pretty orange pepper!
Fun, right?
Also mandatory for preventing Sunday night blues:
It doesn’t hurt!
I sliced up all my veggies, along with a few slices of onion
Sprayed them with cooking spray and seasoned with garlic salt and pepper
And put everything except the tomato onto a hot grill pan
After about 5 minutes, I flipped the veggies and added the tomato
Pretty, right?
After about 5 more minutes, my veggies were ready to turn into a panini!
I layered them on top of a whole grain ciabatta roll with the insides scooped out to make room for the veggies. I layered muenster cheese inside the roll to act as glue and add some delicious gooey-ness, plus a few basil leaves for freshness.
Besides, fresh basil makes everything better, don’t you think?

Onto the hot Griddler she went for about 7 minutes, to really crisp up the bread.

This definitely kicked my Sunday night blues in the facehole!
Admittedly, it was a little slide-y to eat, but when you eat alone, you can make a total mess of yourself and no one minds! ![]()
And really, I don’t mind getting messy for some good grub! This definitely met the criteria!
