I got bit by a baking bug last weekend and decided to do something with the few ingredients I had lying around. I really wanted to use the coconut oil I got from Swanson Health Products a few months back, since it’s been sitting in my cupboard begging me to use it.Â

Remember a hundred years ago when I was on a serious muffin kick, baking them at least once a week??? Yeah, I don’t really remember, either. But there’s archival evidence that says it’s so! See?

Banana Coconut Breakfast Muffins
Strawberry Banana Flax Muffins


Anyway, I thought I’d give some muffins a shot once again, incorporating the coconutty goodness of the oil as well as a little coconut flour just for good measure.Â
Never having baked with coconut oil before, I wasn’t sure what to expect, but these were good.Â
Cranberry Coconut Muffins
Makes 6
1/2 cup all purpose flour
1/4 cup coconut flour
3/4 tsp. baking soda
1/8 tsp. salt
1/4 cup extra virgin coconut oil, melted and cooled
1/2 cup plain Greek yogurtÂ
1/2 T. flax mixed w/ 1.5 T. water, chilled (or one egg white)
1/3 cup brown sugar
1/2 cup unsweetened vanilla almond milk (or whatever milk you like)
1/2 tsp. vanillaÂ
1/3 cup dried cranberriesÂ
In a small bowl, combine dry ingredients and set aside.
In a medium bowl, whisk together coconut oil, yogurt, sugar, milk, and vanilla until thoroughly combined. Stir dry ingredients into wet and mix just until incorporated. Fold in cranberries.Â
Use 1/4 cup measure to transfer batter into greased muffin cups. Bake for 20-25 minutes, then cool completely.Â
These aren’t the fluffiest muffins, but the subtle coconut flavor from the coconut oil makes them rich, so you don’t feel like you’re missing anything.Â

These are strangely addictive, though.

So much so that I may or may not have put away the whole half dozen in a span of 24 hours.

Coconut oil was the first coconut product I ever tried… and it was in a baked good too! I was “terrified” of it not too long ago, but now I know the saturated fat is in fact amazing for you!

Hi Brynn! Sorry, I don’t know of any GF options, but the PB coconut muffins above are GF! As for nutrition, the coconut oil has good fat and they clock in around 220 calories a piece.
