Apple Bacon Panini

Well, hi.

I have to admit, I’m feeling a bit lackluster this evening. My seasonal allergies are kickin’, and it hasn’t been a pretty day.

Suffice it to say, it’s been dirtass.com over here today. The good news is, I’ve discovered that my productivity is in no way correlated to whether or not I’ve showered, so despite my lack of cleanliness and feeling like my face is going to explode from sinus pressure, I was rather productive today.

I also skipped my run today and lifted weights instead. It was weird. And disconcerting. But the fact that I could hardly breathe made it slightly easier. Slightly. But to be quite honest, it’s past 8 PM, and I’m still kind of thinking about going for a run.

But I’ll probably have wine instead.

Anyway.

Even though I’m feeling pretty crappy, I can still taste food, so I broke out the Griddler for a panini dinner.

Oh, Griddler. How I’ve missed you! Let’s never be apart again, mmmmkay?

Apple Bacon Panini

Serves 1.

2 slices good bread (I used Great Harvest Honey Whole Wheat)

1/4 cup fontina cheese, shredded, or 2 slices fontina

2 pieces bacon (or turkey bacon)

3 thin slices of apple

1/4-1/3 cup caramelized onions (I added thyme and garlic to mine)

This is so easy and soooooooo good! Just top your bread with the apple slices, bacon, cheese and onions, then put the other side on top and spray it with nonstick cooking spray. Onto the Griddler she goes!

Sweet, salty and savory, I adored this combo!

I am always a huge fan of salty/sweet combos, but this had an extra edge to it. You’ve got sweet from the onions and apples, but salty from the bacon and cheese. And the honey whole wheat bread balances everything out perfectly.

You should probably go make this. Like, now.

I sauteed a few veggies on the side for nutrition and all, but the sandwich totally did it for me.

Get ready to see more paninis around here! Now that my Griddler is out of storage, I’m ready to put ‘er to good use!

There’s a small window when I actually feel decent with this whole allergy thing, so I’m going to take advantage and try to fall asleep before it ends. Because when it does, I’ll wake up. Like I did last night at about 2 AM. And then I proceeded to stay awake until after 4. Awesome. Let’s hope I don’t have a repeat performance tonight!

Do you have allergies? What works best for you?

Right now I’m digging a combination of Mucinex and Advil, but honestly, I would take just about anything to make this go away.

    Hi! I’ve been reading your blog for a while now but haven’t commented yet. That panini looks amazing! I know what I’m making for dinner now. :) I get really bad allergies in the Summer, and Benadryl always works for me, but it makes me very sleepy and scatterbrained.

    • Hi Jessica! I’m so glad you commented! :) I’ve heard bad things about Benadryl, so I’ve stayed away so far. Maybe if I get desperate!!

  2. Hmm, I’m no good for allergy remedies because I don’t have too many issues with them. However, if I have a bad runny nose, a good dose of Sudafed or Benadryl does the trick for me.

    Also, I’m a fan of that “dirtass.com” phrase you threw out there earlier. Totally awesome.

    • I thought about trying those, but I was worried they’d knock me flat!

      Glad you liked the dirtass.com. That’s pretty much how I feel most days now that I work from home. And sadly, I don’t really mind. ;)

  3. What’s up with you and Rachael and your allergies? Sheesh! None for me. I’m pretty freakin awesome like that. However, instead of allergies I had acne and was fat growing up, so it’s an even trade.

  4. I had an eerily similar dinner: grilled cheese with havarti, bacon, and a peach-horseradish relish on the griddler. Love the salty sweet combo! You win though, caramelized onions take everything to the next level

  5. Wow, I need a griddler! My dinners have been SO lackluster lately. Like smoothies and cereal style! I need some of this in my life. I don’t really eat bacon, but my gastro doc told me a few days ago that he doesn’t think I’m lactose intolerant after all, but that I might be able to consume dairy in moderation . . . so this opens up a whole new WORLD of possibilities. :) :)

    As far as allergies go, claritin has worked for me in the past. Feel better soon!!

    • Yes, you do need a Griddler! Best gift I ever got! I made this with turkey bacon if that’s more appealing. That would be awesome if you could have dairy! :) Woot woot!

  7. Aw I’m so sorry about your allergies! I usually get them pretty bad during the spring and early summer. I always take zyrtec or claratin. I’ve read that you need to take them everyday, consistently in order for it to really work! That panini looks awesome! Hope you feel better soon :)
