Whew! Last weekend flew right by! I seriously don’t think I stopped for a single second! The good news, though? I got my home office set up! Yipeeee!!!

Absolutely nothing special. You can’t see in the picture, but the baseboards are a different color white than the walls which are a different color white than the ceiling. So, I spent a thrilling Friday night painting the ceiling and baseboards the same crisp white. Then I ate a frozen pizza and watched Person of Interest on my DVR.
Saturday morning, I was up early to do a long run for my half marathon training. (The run deserves its own post, so you’ll have to wait until tomorrow for that.) Unfortunately, my iPod was dead. 13 miles with no tunes? Definitely not happening.
Anyway, long story short, I got a much later start with the painting on Saturday than I had hoped. Given that I’d never actually painted a room before, I had pretty much no idea what I was doing. But aside from spilling a bunch of paint early on and a badge of honor sized blister on my hand, it wasn’t too bad. If I could get someone to do all the trim for me, I totally wouldn’t mind painting one bit!
Then on Sunday, it was time for Ikeafest 2011! I literally spent the entire day assembling bookcases, a chair and a desk. Bookcases—easy. Chair—easier. Desk—total PAIN. I must’ve put that thing together and taken it apart at least 4 different times before getting it right. And I thought it would be easier than the bookcases. Silly rabbit.
But! By the time all was said and done, I had an office!
I’m so proud of my little achievement. Given that I have such a hard time picking out, well, anything, it’s kind of amazing that I had an idea of what I wanted, picked out things to make it work, bought those things, and then executed by vision. Who AM I?!?
Usually, I play it safe and just pick out the coordinating furniture that they have set up in the store, but I deviated from my matchy-ness and went with something different. I actually really like how it all looks together!
Obviously, it’s not totally done yet, but for the office portion of the room, I’d say it’s fully functional! I even got a fun mirror for the wall.
I’m so proud of myself! I actually did something to make my life better instead of having a nervous breakdown! ![]()
My dad also came over yesterday to install some light fixtures. They may not seem like a lot, but having them all match makes the place seem so much more homey to me.

So, the place is coming along. I feel 110% better about it than I did last week, and I’m hoping that I’ll start feeling more settled soon.
As a reward for all of my hard work, I made myself a giant stack of Coconut French Toast last night.
Yep—you even get a recipe from me today because I’m just that good. Domestic goddess, what?!?
Coconut French Toast
Serves 1
4 slices good quality bread (I used Honey Whole Wheat from Great Harvest)
1/4 cup coconut milk
1/2 cup egg whites (or 2 eggs)
1/2 tsp. cinnamon
1/2 tsp. vanilla
1/2 tsp. coconut extract
1/4 cup shredded coconut
Preheat your griddle to medium. Whisk together the coconut milk, egg whites, cinnamon, vanilla, and coconut extract in a shallow dish. Put the coconut in an even layer on a small plate. Dip each slice of bread in the mixture to saturate both sides, then press into the coconut to coat both sides.
Spray your griddle with non-stick cooking spray and grill the toast for 4-5 minutes per side or until golden. Top with syrup (I added some coconut extract to that, too, because more coconut is always a good idea in my book).

Oh, the place looks so good! I love the blue/gray paint you picked for the office and I love love love the bookshelf. You did good! Man, I love taking on projects like that and seeing them through. It makes you feel so accomplished and like you really did something that matters. Did your rug come from IKEA too?

I might have to paint over it when I leave, but considering how crappy the paint job is that they left me with, I’ll just slap something up over it. I figured it’s worth it to make it more homey.
