Super Healthy Peanut Butter Cookie Dough

This morning, I was all set to be all reflect-y and write something about all the crap swimming around in my head, but my heart just wasn’t in it. I was distracted. Restless. I couldn’t sit to it, ya know?

So instead I’m going to tell you about these.

Those, my friends, would be last night’s dessert. In keeping with the no cooking theme of the evening, I made Chocolate Covered Katie’s Peanut Butter Cookie Dough Cookies.

I followed her recipe almost exactly, just subbing in dates for the raisins—I just cannot get on board with raisins—and they were so fantastically yummy! She’s not kidding when she says they’re addicting. I dug every last morsel out of the blender. No crumb went uneaten. Too freaking delicious!

Now, these aren’t exactly healthy if you eat all of them, but they’re not horrible for you, either. I mean, it’s just dates—which are fruit, right? And peanuts. So those grow in the ground, I think. All good for you stuff. Super healthy.

This morning I had a rather chilly 4 mile run. It already kind of feels like fall in the mornings here . . . too soon! Maybe I need to rethink this moving thing. I mean, my stuff is still all in Richmond in storage . . . Smile

Alright, enough lollygagging. Time to do the workings. (<—What? That is totally a thing.)

  1. Those cookies look good! I’m all about raisins too. You sure you can even taste raisins since they are in a food processor anyway? Lots of stuff in this world can be grinded up to nothing so you don’t taste it. :-)
    Now I just need a food processor.

    • It’s the very idea of them that offends me. But no, I probably couldn’t taste them. :)

      You should get a magic bullet! (And that sounds dirty.) Anyway, I think it would be perfect for making these!

      • Hahaha you sound like my sister! She won’t eat ANYthing with raisins! (She also won’t eat bananas, but that’s another story…)

        And your cookies look gorgeous! I think your post made me laugh like seven different times. I love your made-up word :).

        Also, can you please send some of that weather to Texas??? I just got back from running in 90 degrees… and it’s not even 9am yet!

    It feels like we’re going to have an early (or at least sudden-onset) fall in MI this year! I went for a walk this weekend and took some photos of the leaves that were changing (and FALLING). But it was SO NICE to sleep with the window open last night and not need the AC. I’m torn. :P

  3. Alright I thought you had me at that salsa from the last post– that looks so delicious, I love all the texture and colors.

    But then I saw this peanut butter nonsense and I almost drooled on myself. I need to makes these asap! They look so soft and chewyyyyyy….

  4. Yes, I recommend you make both. Immediately. But be warned: they are highly addictive. As in, devour the entire portion and then be sad that it’s gone addictive. :)
