What {Else} I Ate

Good Friday Morning!  Can I get a “woot woot” for Friday?!?  This week has actually flown by for me.  I can’t believe it’s the weekend already!  I’ll take it! :)

As you know, I don’t typically post everything I eat on the blog, but I’ve had a few tasty treats in the last few days that I thought it necessary to share.  They were just too good!

First up, desserts!  I have a wicked sweet tooth and around 8:30 every night, it demands to be fed!  Since buying ice cream inevitably leads to me devouring the entire carton in a matter of days, I’ve been making different versions of banana soft serve.  The latest:


That would be one frozen banana put into the food processor with just the tiniest splash of coconut milk and blended until smooth.  Then, I added in a heaping teaspoon of cocoa powder and a little more coconut milk and blended again until it was smooth and creamy.  007

Served in a wine glass because aren’t things that are not wine just so much more fun when served in a wine glass???

My other recent obsession has been Chocolate Covered Katie’s cookie dough balls!

Chocolate Covered Katie can do no wrong.  And I absolutely adore that she does “Single Lady” desserts!  A girl after my own Party of One heart! :)

I also have a few salads that I’ve thrown together while making dinner.

Spinach with strawberries and feta:

And a “leftover” Greek salad with romaine, grape tomatoes, feta, cucumbers, and pepperoncinis, plus a pita on the side.

I pack my salads in a plastic container, putting a little olive oil and vinegar or lemon juice plus salt and pepper in the bottom before adding the greens on top.  At lunchtime, I just shake shake shake and get a perfectly dressed salad!

Here’s another random “I have a bunch of produce dying in my fridge” pizza I made a while back, too!004

Thinly sliced zucchini and squash with artichoke hearts and halved grape tomatoes, topped with fresh parmesan.  For the “sauce,” I just used olive oil, garlic, and salt and pepper over the crust.  003

  1. My friend Michelle is insisting I make Nutella brownies. And really, she had me at “Nutella.”
    1/2 cup Nutella, 1 egg, 5 tbsp of flour. Mix. 350 for 10-12 minutes.
    I’m pretty sure she could have said “Nutella Dirty Sock” and I would have agreed to make it. I’m gonna try to make them this weekend!

  2. mmm I love the look of all of your eats! :) Particularly the soft serve and the pizza. mmm mmmm!

    I wish I could think of new recipes but my creative center of brain seems shot today! I guess it’s ready for the weekend! I hope you have a lovely one! :)
