Good Tuesday morning! How’s everyone doing today? I, for one, did not want to get out of bed this morning. Guess it’s just my usual tired Tuesday . . .
I woke up this morning craving this frozen banana soft serve concoction I made last week. Sadly, my mornings don’t give me any extra time, so I’m planning on whipping this up for a snack as soon as I get home this afternoon! I always keep a few frozen bananas on hand so I can make myself some soft serve or a smoothie whenever the urge strikes. Just don’t make the mistake of freezing your bananas with the peels on. Peels on = peels frozen to bananas.
Chocolate Nut Butter Banana “Soft Serve”
1 frozen banana
1 T. cocoa powder
1 T. sunflower seed butter (or any other nut butter)
Break your banana up into pieces and put it into the food processor. Process until it becomes smooth and creamy, ~2 minutes. You may need to scrape down the sides and blend it a few times to get the right consistency. Sometimes I add in a few drops of water, just to get things moving. When the banana is all custard-y, add in the cocoa powder and nut butter and process until smooth. Sprinkle with sea salt. Mmmmm.
Since my sunflower seed butter is a drier nut butter, it stayed in little bits throughout the soft serve, just like peanut butter sometimes does in parlor ice cream. SO good! Tastes like dessert, but healthy enough to have for breakfast. Win!
