Roll Out

Ack!  Today is one of those days where I feel like I’m being pulled in a million different directions.  I’m trying really hard not to be stressed out, but I’ve got to tell you, it’s a bit of a struggle!

I squeezed in a 4 mile training run for my 10K after school today.  It’s cold and drizzly, so I opted for the treadmill.  When I got to the fitness room at my apartment complex, both treadmills were taken.  Boo!  Lucky for me, after ~7 minutes on the elliptical, one opened up and I hopped on!  I did a 3-2-1 interval workout that looked something like this:

Quick and dirty, but it got the job done!  I stopped at exactly 4 miles.  Doing intervals on the treadmill always makes the time fly, but I still have to cover the display.  It’s a thing I have.  If that sucker’s not covered, I obsess!

Today, I’d like to roll out a new weekly feature on HHH!

(BTW, if you can’t tell by now, I have a soundtrack playing in my head for pretty much everything I do!)

OK, back to my new feature!  In keeping with the cooking for one theme, this new feature will focus on one key ingredient with different recipes to use it up throughout the week, even if you’re just cooking for one.  I’m calling it (what else?)

Party of One! :D

Each week, I’ll choose an ingredient and give you at least 2-3 recipes or ways to use it, so nothing goes to waste.  Whaddya think?  Sound good?  Hope so!  Let’s get started!

This week’s Party of One ingredient:

Fresh Mozzarella!

I used to only buy this for Caprese Salad–you know, the one with tomato, basil, and mozzarella–but then I was always left with a big hunk of it leftover and never used it up before it spoiled.  Fail.

I started experimenting with it more when I got my griddler for Christmas and let me tell you, this little guy is a star!

So let’s get to it then, shall we?

Last week, I was all set to make this particular recipe, but I found that my mozz was a little funky, so I opted for PB & J instead. Fortunately, I planned ahead this week, so I won’t have that problem again!  Tonight we’ve got . . .

Strawberry Mozzarella Thyme Panini

Based on this recipe.

You need:

1 piece ciabbata

2-3 T. strawberry jam

2 slices fresh mozzarella

1/2 tsp. thyme, crushed

~1 T. white sugar

cooking spray

a panini press or a makeshift one! ;)

First up, defrost your ciabatta if necessary, but be sure it doesn’t get warm in the microwave or else it won’t crisp up for you.  Mine is usually perfect after a minute in the microwave at 50% power.

Next, we jam.

She’s a bad mamma jamma!

Strawberry jam, that is.

Spread it over one slice of your bread, like so.
Then, using a very sharp knife, slice a couple of pieces off your mozzarella.  Some people put the mozz in the freezer for a few minutes before they slice it to make it easier, but a sharp knife seems to do the trick for me.
Top the jam with the cheese.  Sprinkle with thyme.  Be sure to crush it up between your fingers so you get the full flava!
Add salt and pepper to taste.
Now that she’s assembled so pretty, spray the top with some non-stick cooking spray so you have a good coating.
Put your sugar on a dish and pat it out into a thin, even layer.  Carefully turn the sprayed side into the sugar.  Shimmy and shake it around a bit until it coats the entire surface.
Spray the un-sugared side with non-stick spray and onto the hot Griddler she goes!
Five minutes or so later . . .
Ooey gooey goodness!

Fresh mozzarella is so perfect for paninis.  And I love how the sweetness of the jam plays against the savory thyme and creamy mozzarella.  Toss up a quick salad or throw some sweet potato fries in the oven, and you’ve got a complete meal!
And guess what I did while my panini was grilling?
Put together this little guy!  An English muffin version of the same thing to take for lunch tomorrow!
She’s not all that pretty, but would you look at that gooey melted cheese???  Can’t wait to get into this tomorrow.  I love it when I’m excited about my lunch.  It gives me something to look forward to!
I kept dinner on the light side tonight because I’m off to Studio X for a pole dancing class!  I won 5 free sessions in the goodie bag I got last weekend, so might as well try my hand, er, leg at it.  (Sorry, couldn’t help myself! )
